Blueberry muffins or cake

Blueberry cake



 Blueberry muffins

4 eggs
2 1/2 dl sugar
140 g butter, melted
150 g plain yogurt
70 g sour cream
3 tsp baking powder
5 dl wheat flour
40 g flax seed
250 g blueberries 

1. Foam the sugar and eggs.
2. Mix all the dry ingredients together.
3. Mix yogurt and sour cream together.
4. Add butter to the egg foam.
5. Add the yogurt mixture and the dry ingeredients 
one by one and mix well but carefully.
6. Add the blueberries.
7. Fill the dough into the forms and bake.

You can leave the flax seeds away if you want. I have been adding them a bit here and there to give my digestion a boost. You can also try chia seeds. You can use some other berries or fruits like apple cubes. Also rhubarb goes nicely with this recipe. You may replace the plain yogurt or sour cream with milk.  

You can use muffin forms or just an ordinary cake form
