Brunch at home
For the last months this blog has been a pretty forgotten project. I have been too lazy to do much at home except for bit of sport and reading. I have also occupied myself with some baby planning. In the summer our family will grow with a one small bundle :) There is still some time to go, but my head is already planning and wondering all kinds of things. All in all the first half of the pregnancy has been easy but for the tiredness. After a stressful working day I just want to curl on the couch and read a good book. Lately all the cooking has been Hubby's responsibility.

Now the spring has finally given us a couple of its warm and sunny days and I feel like being filled with energy again. Yesterday we had our first breakfast on the terrace this year and it was absolutely lovely. Even the cats were over the moon: researching everything and jumping allover.  I managed to bake some scones and do some pancakes.

Manchego leek scones

370 g wheat flour
1 g salt
15 g baking powder
170 g butter, cubed, cold
50 g eggs
110 g sour cream
115 ml cream
40 g leek
70 g Manchego
pinch of piment d'espelette
poppy seed for the top

For the basis of this recipe I used the one in the book "Mastering the Art and Craft: Baking and Pastry" of The Culinary Institute of America. The original recipe is for sweet cream scones. After couple of changes this recipe is now  usable for savory scones as well.

 
Pancakes

Pancakes

400 ml milk
200 g wheat flour
50 g sugar
15 g baking powder
4 g salt
1 egg
50 g butter, browned
vanilla sugar or seeds

This recipe is my own recipe which I use at work on weekends, when we serve pancakes for our guests. I always prepare the dough a day before to let it swell. I also did the dough for the scones the day before so I didn't have to use the whole morning for baking. After forming the scones I freezed half of them. So for the next brunch I have some ready in the freezer, which I only have to defrost shortly and bake.
